The pool views in both towers are the better views - the mountain views are basically views of nothing. However, the pool views at Hard Rock are also a lot more expensive, especially if you are staying a few days. You have to ask yourself how much time you will be spending looking at the window and how much it's worth for you.

I have stayed in the Casino tower a few times but not the Paradise tower yet. The Paradise tower is newer so the rooms are more modern and updated - however the two trade-offs are that the elevators for Paradise tower are much further to walk to from the main entrance and the casino, and the rooms have sealed windows, instead of the Casino tower room's unique balcony-style doors that open up (some people never open up the doors anyway so it wouldn't make a difference to some, but I love propping them open and having a breeze blowing through the room)
References :
Pool view in the Paradise Tower. It is the newer tower. The term "mountain view" in Las Vegas basically means no view. The mountains are pretty far away and while you might be able to see them you will basically be looking at urban sprawl between you and the mountains.
